It’s incredibly apropos that an establishment known for its nearly scientific method of serving drinks is named after one of the great theoretical physicists in German history, Werner Heisenberg himself. But at Heisenberg, the science involved is less about the mathematics of motion and more about the function of flavour.
The mastermind behind this operation is Robert Bettendorf, a bartender who specializes in serving up a unique experience for each and every one of his patrons. Not one to be intimidated by new combinations and unexplored territory, he is a drink chemist who has created his own list of libations: offerings that are created and perfected through a process of experimentation, perfected by trial and error.
Eschewing the traditional approach of staple bar beverages, he caters each cocktail to a particular palate. For a price tag of 3,50 Euros a pop, Bettendorf combines two or three different tastes specified by each drinker, resulting in something unique that can’t be found elsewhere, and which also possibly eludes being replicated precisely in the future. And while, admittedly, this confidence-backed concept evokes an air of pretension, the low cost of these custom-drinks puts any related claims to bed.
Betraying the Berlin norm, the décor of Heisenberg foregoes the images of a traditional, dark, smoky, bar that might come to mind, trading those clichés in for warmth and modernity, while remaining unassuming. Atmosphere is important, but what is key is the selling point of a custom-fit experience, which is something that you can’t find at any old random corner pub.
Heisenberg is located at Schillerpromenade 11, in the Schillerkiez of Neukölln, a district defined by the surgance of new, hip bars and galleries, much like the one in question. It is situated equidistance between the Boddinstr. and Leinestr. stops on U-Bahn line 8.
